Butter is BACK, baby, and melting its way into your cup of coffee. Sounds strange but it's an established tradition across the globe that's becoming more popular here—especially now that we're free to eat saturated fats with reckless abandon. The drink, dubbed Bulletproof® Coffee, is said to have rejuvenating powers and also aid in weight loss as part of a high fat, low carb diet. Or it's just an excuse to put butter in all the things, whatever works.

Concetta Smith at The Spoon and Apron, a blog that specializes in grain-free recipes, came up with a recipe for the concoction, which includes some easy-to-make homemade butter. It's important to use quality butter—sorry Land O'Lakes—that's non homogenized and not ultra pasteurized to receive the full health benefits. Smith likes Ronnybrook Farms but any of the good stuff from the farmer's market works too.

You can make the buttered coffee to your tastes—the butter takes the place of the dairy/dairy substitute in a regular cup of joe—including adding flavors like honey and sugar to the butter. Below, Smith's recipe, which can be made hot or iced.

Vanilla Coconut Bulletproof Coffee

  • 1-2 tablespoons grass-fed butter (add 2 tbsp if you omit the coconut oil)
  • 2 teaspoons coconut oil (optional)
  • 2 teaspoons honey or coconut sugar (optional)
  • 1 teaspoon vanilla extract

Brew two cups of coffee. Place in a blender with butter, coconut oil, vanilla, and honey [Smith says you can also whisk vigorously in lieu of a blender]. For iced coffee, place in a jar, add ice and shake rigorously, or throw in the fridge for the next morning.
