London Fog tea (Jen Carlson/Gothamist)
Tea is especially good when it's served with a little bit of milk and honey. Anyone who isn't drinking it like this is probably on a cleanse, or freaked out at the concept of putting dairy into hot water (it's safe!). With that in mind, the ultimate tea treat is in latte form, where the milk and water ratios are pretty much split equally.
We are not talking about the sugar-filled, calorie-packed chai lattes from Starbucks (they also used to serve these). Those are neither tea nor lattes, but more like hot milkshakes.
This weekend we were reading Tasting Table's tribute to the London Fog: "a luxurious combination of Earl Grey tea, steamed milk and vanilla... which bears a passing resemblance to sipping a marshmallow." Sold.
The drink is believed to have been created in Vancouver, and will now get us through the remaining chilly days of the season.
The recipe varies, but this seems to be the simple go-to one (we made some changes we made during our own experiment, which you'll also find below).
- 16 oz of milk (note: we used 1/2 cup of almond milk and it worked just fine, though doesn't get as frothy)
- 1 shot of vanilla syrup per 16 oz of milk (note: we threw a dash of vanilla extract into the milk, instead)
- 1 bag of Earl Grey tea
- 1/2 cup boiling water
We also tossed some lavender on top, because Instagram. (And also because some variations include lavender.)
