The weekend-long celebration blends culture, craft, and plenty of tastings. This year’s Culinary Theater reads like a who’s who of American pastry and chocolate: One of America’s trusted culinary voices and a beloved Top Chef judge, Gail Simmons, who will make her Salon du Chocolat NYC debut, James Beard Award–winning pastry chef and Food Network’s Sweet Dreams host, Gale Gand, and award-winning pastry chef and former head chocolatier at Kreuther Handcrafted Chocolate, Angela Borah, to name a few.

Jacques Torres opens Saturday’s Culinary Theater with a welcome, then hands the stage to Chef Ken Goto of Jacques Torres Chocolate for a live demonstration showcasing the craftsmanship and technique that helped turn Jacques Torres Chocolate into a New York institution.

This year’s Fashion Showcase, where chocolatiers and emerging designers collaborate on life-sized, wearable chocolate gowns, honors America’s 250th birthday. Each piece takes on patriotic significance while spotlighting New York City’s role in our nation’s founding. Vanessa Greeley’s design pays tribute to America’s Native American origins, crowned with the Statue of Liberty’s iconic headpiece, while pastry chef Daniel Andreotti crafts a white chocolate gown finished with red, white, and blue stars and stripes.

Chocolate producers and artisans from around the globe will bring their finest to Midtown. Global standouts like Läderach, the Swiss chocolatier known for its handcrafted confections, and Ecuador’s Muze Chocolate, highlighting single-origin Amazonian cacao, join legacy names such as Jacques Torres Chocolate, Valrhona, EJ’s Chocolate and innovative bean-to-bar makers.

For the first time in the event’s history, wine and spirits join the program to deepen your chocolate appreciation. Belgium’s Chocolate in a Bottle debuts its sparkling wine blended with Belgian chocolate, while guided tastings explore chocolate pairings with whiskey, rum, and craft spirits, showing how these combinations elevate both.

Go beyond tastings and dive into the weekend’s chocolate story through immersive experiences. “Chocolate Shaman” Jamie Metzl leads a sacred cacao ceremony exploring chocolate’s ancient cultural roots, while the “Bite-Sized” Kids Zone offers hands-on bean-to-bar activities that take young visitors from cacao pod to finished bar. The centerpiece of the experience is Chef Håkan Mårtensson’s live chocolate sculpture: over the course of the weekend, watch a single massive block transform into an intricate masterpiece, and stop by throughout to marvel at the evolving detail and artistry in real time .
